A Chilean take on the french mille-feuille, this is the cake most people would have for their birthdays back home. Made with multiple layers of a thin buttery cracker-like pastry, filled with alternating rich flavours, traditionally ‘dulce de leche’ (milky caramel sauce) and soft Swiss meringue. Other popular choices are jam, chocolate ganache, raspberries, walnuts and pastry cream. You can go with the traditional version or personalise to your taste. (serves 12, 6″ diameter)
