Egusi soup with eba is a traditional Nigerian dish. Egusi soup is a thick, nutty soup made from ground melon seeds (egusi), various vegetables, and either meat (cow, goat, turkey or chicken), fish (mackerel), or both.Eba is a staple food in Nigeria made from cassava flour. It is like a dough ball served alongside soups and stews. To eat egusi soup with eba, you tear off a small portion of the eba, shape it into a ball or use it to scoop up the soup.
