Saltfish fritters are also also known as ‘stamp and go’ and are made of salted cod with peppers, spring onions and then deep fried. It can be enjoyed as a starter but in Jamaica is commonly had for breakfast or as a side dish. The name of the dish is thought to originate from 18th century British sailing ships!
