This is a really rich and creamy vegetarian frittata. The sweet potato and red peppers are slow roasted so they they are richly caramelised, soft and sweet. I then also slowly caramelise thinly sliced white onions over a long period of time so they have an intense, deep flavour. Mixed in with British, free range cream, mature cheddar cheese, pasmesan and organic eggs with a base layer of lightly sauteed potatoes, making it a really satisfying meal/snack by itself, but then makes a great lunchtime or evening meal if served with extras such as a salad or steamed veg.
