Parmigiana Focaccia


One Focaccia serves 2-3 people as an accompaniment/ side dish. 

Focaccia is served often on Saturday night in Sicily or gets brought out at a party! It has a spongy centre with a crunchy crust thanks to a vigorous kneading technique, and is topped with a layer of Italian tomato passata, air fried aubergines, Italian mozzarella, basil from my allotment and parmigiano or salty ricotta shaves – matching the typical parmigiana flavour.
