Jerk Chicken


This jerk chicken serves 3 people and comes with rice and peas (or plain rice) and coleslaw.

As one of Jamaica’s national dishes, it is usually cooked over hot coals on a jerk drum but I have taken my own approach to the dish. The origins come from the Taino who created the jerk method and passed it on to African slaves, adapting it to create jerk chicken. The word jerk apparently comes from the Spanish charqui,  which meaning dried strips of meat.
