Chicken Mandi is a smoky roast chicken and rice dish that is originally from Yemen. Traditionally it’s cooked in taboon (underground oven), thankfully there is a modern way to cook which gives you the same scrumptiously tender dish. Chicken Mandi is packed with warm flavours of saffron and cardamom, served with a side of yoghurt/ harissa. This dish makes 4 generous servings.
