Cassata Cake


Cassata is a traditional Sicilian cake with a sponge base filled with a ricotta sweet cream, dark chocolate chips and mixed candied fruit (orange, lemon, cherry). It is usually covered with almond marzipan, but I have steered away from the traditional recipe and chosen to cover the cake with an additional layer of ricotta cream, some candied cherries and oranges, all topped with chopped almonds.
