This eggplant parmigiana is one of the favourite recipes to be served on the table as a main course or as a quick dinner in Sicily. Layers of air fried aubergines, Italian tomato passata, Italian mozzarella, breadcrumbs on top and bottom with  Parmigiano flakes, fresh Italian olive oil and basil on top. Good warm or cold, this Sicilian Parmigiana is perfect for all occasions. And of course you will need to have plenty of good fresh bread to accompany it, a must!
