all about Liam and Shalimar
We were born and raised in Trinidad, a tiny island at the tip of the Caribbean, and emigrated to the UK for our careers. We are an Engineer and a Television Editor, but when the workday ends the computers are turned off and the kitchen wakes up. As we don't often get to visit Trinidad, we have been on a journey to replicate the flavours of home right here in Bristol. We've been introducing our British friends to our food, and are ready to take a leap and bring it to you!Growing up in Trinidad, fresh fruit and vegetables were abundant. We would go out to the garden and pick fresh avocados, mangoes, passion fruits and more from trees planted by our families. Celebrating local produce is key for us, and we want to bring you the flavours of home while celebrating Bristol grown produce. We plan to bring you chilli sauces with chillis grown in our green house, fresh green seasoning from homegrown herbs and more. This is an exciting new adventure for us, and we hope you join us for the journey.about my food
This isn't Caribbean food as you know it...Through colonisation, over several centuries Trinidad has seen the arrival of immigrants from Africa, India, China and Europe. This, combined with the local Carib and Arawak people, has allowed Trinidad to become truly the most racially diverse country in the Caribbean. When these cultures arrived, they each brought their food and over the years this food has melded into a totally unique blend of flavours. We plan to bring you a subset of these flavours, expanding our range over time. We'll be starting with Indo-Trinidadian and Creole (mixture of European and African). We hope to introduce this to you through curries that are unlike your typical takeaways, stews with deep rich flavours, vibrant pickles, and of course, some seriously spicy (seriously flavourful) hot sauce! We rotate new dishes onto the menu regularly, so check back.see more..

Amazing food! I was delighted with the flavour and taste of all the dishes and would recommend Liam and Shal's dishes to anyone. They were really helpful and food was packaged nicely on collections. Our guests loved the food and so did we.
Deborah Smith –
Thank you Liam & Shalimar for a fabulous meal. Really amazing flavours- very aromatic and interesting flavour combination. Very generous portions without being too heavy. Just loved our introduction to Trinidadian cooking - looking forward to more!

Everyone in our family party of 14 loved the food. In particular, the stewed chicken was amazingly flavourful and the pineapple accompaniment was highly praised, as was the red bean dish. The rum cheesecakes were terrific. Shalimar and Liam were a delight to deal with. Definitely strongly recommended.

Ordered stewed chicken, macaroni and beans for my Trinidadian father. His review: Just had some of the Trini food and it was absolutely delicious. Not too far from my Mom’s cooking and cannot possibly fault it. Pepper sauce was very good too. Please pass on my thanks to Liam & Shalimar. They are doing a great job.

You could tell the ingredients were fresh and the food had been made so well.To then complete the meal with those cheesecakes 👌👌👌 So nice to have something different and made so well. Such tasty food!! We ordered the Stewed Chicken, Macaroni Pie & Red Beans with Pineapple Chow. The chicken was my absolute highlight, amazing flavour and really tender. It was all super easy to reheat and very generous portions. I love that it even has added garnish and packaging that is compostable/can be recycled. Would highly recommend!

A wonderful introduction to this cuisine - we loved the hot sauce and its nuanced flavours. Great thoughtful touches like herbs to garnish. Chicken was tender and generous for two greedy folk. Oh and rum cheesecake was fabulous.

I was very excited to try Trinidadian food for the first time, and it did not disappoint! We had the chicken, beans and macaroni pie with some coleslaw and pineapple chow on the side, with the cheesecake to finish. Such unique and comforting flavours and everything paired beautifully. The portion sizes were also very generous, and Liam and Shalimar had gone the extra mile by providing some garnish to add the finishing touches from home. I thoroughly recommend!

A fantastic meal and great value. The chicken, beans, mac&cheese and pineapple/cucumber sides were all excellent. The whole family loved it and we would definitely order again. Thank you Liam and Shalimar!

Wow! Great food at a great price. Liam and Shal went the extra mile with not only the food, sauces, spices, and garnishes, but also the recyclable (and very cute) packaging. The chicken curry was perfectly spiced with tender chicken. I've never had pineapple chow but it was a multi-phased party for my mouth : tangy then sweet then a slight kick : made for the perfect summer side. And such large portions all for such a great price! It's going to be hard not to order this again every single day. Just order it.

From a fellow Trinidadian - This food checks out. I can tell you it’s legit good Trini food! We had the Macaroni pie, stewed chicken and red beans! It was sweet too bad! (Trini slang meaning tremendously delicious). Place your order if you’re ready for an explosion of flavour from the well-seasoned, savoury stew chicken, creamy cheesy macaroni and melt in your mouth red bean stew. The cheesecake was light, perfectly sweet and spiced and was delightfully rationed to the crumbly crust. Oh and wait. The pepper sauce. OMG THE PEPPER SAUCE. It took me right back home, better than the best rated pepper sauce currently on the Trinidad market (I tell no lies)!! It’s not too spicy, but herby, sweet and savoury all at once. Put it on EVERYTHING you eat. Eggs and toast? Fried chicken sandwiches? Macaroni pie? Curried chicken? Do it. I may be going too far to say that I want to bathe in this sauce. Anywhoo, do yourself a favour and get your fill of some wonderful cuisine from Hummingbird and Hibiscus!

The food was well packaged, easy (and accurate!) directions, and obviously above all super delicious. We ordered the chicken, beans and macaroni, with coleslaw, cuc, and pineapple sides plus we had cheesecake. It was a feast!Portion sizes are generous. Packaging compostable. Chicken was tender and juicy, beans brought warmth and comfort with a gentle spice background. The sides and macaroni were all light and fresh (yeah, even the mac). And that rum cheesecake is to die for, texture is smooth and dense NY style which, in my opinion, is the only valid form of cheesecake.Definetly will order again!

A really lovely, delicious supper! Well balanced different dishes all with a great flavour!

Really flavour-some food and good portions. As someone with a young family, collecting cold and reheating is a game changer - no more knowing your food is going cold while the children refuse to go to bed! (Though we did actually share with our 3 year today who devoured it!).Massive fan of the spiced rum cheesecake - fab way to end the meal!
